This one day class introduces you to artisan breads made with natural leavening, commonly known as sourdough. Each baker will prepare and bake a pain au levain, a classic French country bread with a mild sourdough flavor. While the dough is rising the bakers will build a natural leaven from a sourdough starter. At lunch we will sample a variety of Ed’s sourdough breads and discuss how to alter recipes to fit our daily schedules. Following lunch we will practice dough shaping techniques, proof the dough, and bake in the POK ovens. Each student goes home with a delicious artisan loaf, a sourdough starter, and the confidence to bake bread with natural leavening.
