Award-Winning Executive Chef & Certified Sommelier Claude Aucoin,
gold medalist and a senior member and coach of Nova Scotia's Culinary Team,
will prepare a special five course dinner for our members.
Claude is a Culinary Instructor at the NSCC Akerley Campus and, as in the past, will be assisted by students of the institute and by Sommelier Kempton Hyson.

First Course
Stuffed Mushroom with Goat Cheese and Fresh Herbs
Crostini with Charred Red Pepper & Eggplant
Filo Pocket with Sautéed Mushroom and Arugula Pesto
Second Course
Acadian Fricot (Chéticamp Style) with Mini Dumplings
(Dark Chicken Stock, Oulton Chicken, Diced Potato, Celery, Onion, Savoury and Mini Dumplings)
Third Course
Saffron Risotto with Ciro's Asiago and Taleggio Cheese
Fourth Course
Roasted Leg of Lamb, Fresh Rosemary Jus, Baked Tomato served with Green Beans and Almonds and Baby Roasted Potatoes

One American and one Italian wine
