Speakers
Laurel Francoeur (Keynote Speaker) graduated from the Massachusetts Institute of Technology with a Bachelor of Science degree in Political Science with a minor in Philosophy. She is a graduate of Suffolk Law School and has been a practicing lawyer since 1996. She is a support group leader for the Asthma & Allergy Foundation of America (AAFA) and served on their board of directors. She has worked as a Patient Advocate for AAFA & Education Project manager of Kids With Food Allergies Foundation. She is co-owner of Greenlaurel Documents, an on-line allergy resource company specializing in customized food allergy plans. She is author of two books: How to Advocate for Your Food Allergic Child and Flying with food Allergies: What You Need to Know.
Craig Hedberg is a professor of Environmental Health Sciences in the School of Public Health at the U of MN; he has received honors from the FDA, CDC, & MEHA for his work in Disease Surveillance, Environmental Health, Epidemiology, Infectious Disease, and Public Health Preparedness.
William Hicks, M.D. practices at HealthEast Clinic in St. Paul. His medical degree is from the University of Iowa and he did his residency at Michigan State University. He received his fellowship training in Allergy & Immunology at Henry Ford Health System in Detroit, Michigan, and is the father of a food alergic child.
Lars Johnson has been a Certified Food Safety Instructor for 18 years, is a private consultant and owner of LAJ Consulting (doing business as FoodSafetyGuy), and founder of Touchpoint Restaurant Resource Pool.
Melanie Pitts is baker, cook, and recipe developer for people with food allergies and celiac disease, and operates the blog Hope's Kitchen. She is a mother of food allergic children and a registered nurse.
Dr. Allan Stillerman, M.D. practices with Allergy & Asthma Specialists, P.A. in Minneapolis, Plymouth, & Maple Grove; conducts research with the Clinical Research Institute; frequently lectures about atopic diseases; and is AFAA Medical Advisor & Board Member.
