Join us for a special summertime tasting hosted by Julie D. Pepi, CSW, CWE  of Southern Wine & Spirits at Michael's Wine Cellar. You'll recognize a few big profile names paired with several lesser known hidden gems as we taste five big, beautiful Cabs and enjoy light hors d'oeuvres.

Cabernet Sauvignon, Faust, Napa Valley, 2011

To express the complexity of the Cabernet Sauvignon grape and diversity of the Napa Valley, Faust seeks Cabernet Sauvignon grapes from Agustin’s family vineyards in Rutherford and Coombsville, Napa Valley's newest appellation located in the eastern foothills south of Atlas Peak. Agustin’s relationships with growers in other Napa Valley appellations, such as Yountville, Mount Veeder, Atlas Peak, St. Helena and Rutherford, round out the wine with small lots from these spectacular mountain and valley terrors.  Faust is crafted at the Quintessa winery in Rutherford, a state-of-the-art winery with the most modern technologies. The grapes are hand-picked, double-sorted, gently crushed and fermented in stainless steel and French oak fermentation tanks. After cold-soak and fermentation, the must undergoes a maceration period that can last up to three weeks. Critical flavor, aroma and color compounds are extracted at this phase. The wine is then transferred to French oak barrels for an aging period of 19 months.

This wine beautifully expresses the complexity and character of Sodaro's estate-grown Cabernet Sauvignon. It has characteristics of dark, ripe fruit offering bright cherry and blackberry qualities with hints of cedar and sandalwood with a complex structure and flawless balance.  Crafted from Sodaro estate-grown fruit and aged 22 months in French Oak.  It is a blend of 75% Cabernet Sauvignon, 10% Cabernet Franc, 7.5% Malbec and 7.5% Merlot.

Red Blend “Trilogy”, Flora Springs, Napa Valley, 2011

The 2011 Trilogy brings together Cabernet Sauvignon, Merlot, Petite Verdot and Malbec in a wine that is rich, full-bodied and opulent. The dark fruit aromatics carry notes of anise, black pepper and sandalwood, while dark black cherry and cassis flavors drive the palate accompanied by vanilla and white pepper notes. The wine has a seductively lush texture that lingers luxuriously in the mouth.

With a special bottle and label for their 40th Anniversary Cabernet Sauvignon, Caymus is ready to celebrate with this epic 2012 vintage. Charlie and Lorna Wagner, with their son Chuck, launched this winery's legacy as a Napa Valley icon in 1972. Chuck is now the owner and winemaker, and has this to offer: "This wine exemplifies our style of Cabernet out of a great vintage: deep color, rich, concentrated and balanced. 2012 celebrates 40 years of producing our pride and joy, Caymus Vineyards Napa Valley Cabernet Sauvignon.”

Cabernet Sauvignon “Stags Leap District”, Chimney Rock, Napa Valley, 2010

Chimney Rock's 134-acre estate lies in the heart of the Stags Leap District, the first viticultural area in the United States to be approved based on the distinctiveness of its soils. With 28 distinctive vineyard blocks showing an array of different aspects, soil types, clones and rootstocks, this vineyard provides a diversity of flavors that are artfully blended to capture the holistic representation of our estate Cabernet Sauvignon. 2010 was a year of extremes. with greatly below average temperatures, they were on track for one of the coolest years of the decade. An extreme heat spike in late August and another in September resulted in some challenges and reduced the yields. The resulting wines are fairly elegant and balanced.

Each featured wine will be available for special order with delivery scheduled for Friday, June 27.
