Dominique Chapolard and Kate Hill, French butchers and charcuteriers will teach students the secrets to French Kitchen Charcuterie. Learn how to make delicious recipes out of pork, rabbit, and duck like fricandeux, headcheese, pate en croute, rillette, terrine, vontreche (French bacon) and more. Students will get to taste the results. Hands-on!
