Dominique Chapolard and Kate Hill, French butchers and charcuteriers, come to Portland to teach students the art of French butchery. Dominique and Kate will demonstrate on one side of pork while students try their hand at butchering the other two sides of pork. Along the way they'll learn how the French use every part. Students go home with meat!
