PMC Intermediate Sausage Class 9-22-14

In this intermediate class, students will create their own unique sausage recipes using flavor and ratio principles. The focus of the class will be on lamb and chicken. Students will get advanced tips on grinding, emulsifying, and stuffing sausage using non-pork meats and fats and they'll go home with their end products.
