PMC Basic Pig Butchery Class 8-24-14

Learn the lost art of home butchery. For this four-hour, hands-on class, we'll teach students how to split sides of pork into primals, and how to cut those primals into cookable cuts like ribs, tenderloins, ham roasts, chops, and coppas. The class also includes tips on cooking and curing meat. Students go home with their share of the spoils!
