Gumbo CookOff - Galveston Elks Lodge #126 

No rest for the weary! The weekend following Mardi Gras will be time to put those cooking skills to the test in the 1st Annual Galveston Elks Gumbo Cookoff for members, member's guests, and guest cooking teams. 

Great music, games, corn hole tournament, and the always popular dessert auction! Members and their Guests are invited to enjoy a day of competition, fun and games. Just remember to sign the guest book at registration. It's kinda like a chaperone at a high school dance, but waay more fun!

  • Elk Member entry is free (donations are welcome, and will get you an additional vote in the People's Choice)
  • Take Home Bowls of Gumbo - $5
  • Guests - $10 donation
  • Cooking Teams - $40 donation 
* Every member and guest that signs in, gets a ticket for a vote in the People's Choice Award category

 

Gumbo Cookoff Details and Rules

  • $40 Team Donation
  • Teams limited to 4 people per area/tent (seems like a safe idea)
  • All cooking must be done on site, food prep can be performed beforehand. see additional information below. 
  • All team members must be 21 and older, unless accompanied by a parent or guardian

Judging Criteria  

  • Appearance-looks like a good gumbo-roux color, etc. 
  • Aroma-should smell appetizing. 
  • Consistency-stirs like a good gumbo-thickness of base etc. 
  • Texture-Balanced quantity of ingredients. 
  • Flavor- tastes like a good gumbo,  pleasing to the palate
Teams must have a great attitude, HAVE FUN. Cooking conditions are subject to inspection, and Elks Officers in attendance will be judges (or their delegate), and any visiting Elks who want to particiate.  

Basics

  • Registration Table and Check-in will be at the gate facing 23rd Street
  • Quick Team meeting at 9:00 am
  • Turn-in is at 2pm. Each team submits a quantity of 1 quart container, no rice. Additional submissions require an additional team registration.  
  • Cooking tents can be set up in the backyard area (map available at registration), and popup tents (10’ x 10’ max)
  • Tent serviing table is highly suggested
  • Cleaning stations are not required, but is highly recommended. Water is available on site for team use. 
  • No outside alcohol can be brought in, Elks will have a full-service cash bar available, with water and alternate drink options
  • No pets, sorry! (except for Spot!) 
  • ALL TEAM MEMBERS MUST WEAR GLOVES WHILE SERVING. MASKS ARE OPTIONAL
  • Only precooked items allowed are roux and rice
  • All gumbo must be made from “scratch” and onsite.
 
*** RECENT CHANGES *** 
  • Roux can be cooked ahead of time, or be store bought to save cooking time at the event. (but would your grandma approve?)
  • No propane over 5 gallons
  • Propane stoves and small grills can be used as well.

  • There are no guidelines or “Type” of gumbo. Anything and everything can be used (seriously anything)
  • Please have the ingredients listed on the table for those who might have food allergies, quantities are not required
  • Gumbo will be judged by the attendees for people's choice, and blind tasting (by the officers in attendance for 1st, 2nd, and 3rd places.
  • Please make sure your area is clean and all trash has been removed from your site before leaving.

What's Provided
By The Teams
  • 150 Gumbo portions / 3oz portions for attendees (quantity may change)
  • Judging portions, 1 quart 
  • Propane, cooker, pots, utensils, tables, and ingredients, etc.
  • Wash/Sanitation Station
  • Ice Chests are allowed only for items necessary for cooking
  • 10 x 10 (max) popup tent
  • Serving table 

By The Lodge

  • 1 quart containers for judging.
  • 3oz sampling cups, spoons, napkins
