Our Chef in Residence workshops provide an authentic and unparalleled Farm to Table experience. They are co-led by Terri Salminen, celebrated international chef and culinary instructor, and Lindsey Shifley, passionate local food educator and intuitive cook. Terri and Lindsey are both Super Ambassadors with the Jamie Oliver Food Revolution.

Proceeds from the Chef in Residence workshops support the Liberty Prairie Foundation's Prairie Farm Corps youth development program at the Prairie Crossing Farm. The Prairie Farm Corps is cultivating the farm-fresh certified organic vegetables for the Chef in Residence workshops.

A Farm-to-Table Dinner Party

After a lovely walk to pick up farm-fresh vegetables at the Prairie Crossing Farm, we're off to the kitchen for a shared cooking experience.

An Appetizer

Raw vegetable sticks served with an olive oil "pinziminio" and yoghurt lemon dip will be our appetizer during cooking

Meanwhile we will make a Sicilian sweet and sour caponata with zucchini to serve at our shared table

Our Main Course

Roasted red beets with chard filled crespelle

After working together as a team we will sit down to the dinner with a colorful main course of roasted red beets in a mint balsamic dressing, chard sauteed with scallions and mixed with fresh basil as a filling for buckwheat savory Italian pancakes

Dessert

Oven-baked summer fruits with lemon drizzle cake

Summer fruits are in abundance and need little cooking technique to make for a wonderful dessert. We will bake our fruit at high temperature and serve them with almond-cornmeal lemon drizzle cake

Recipes and tips for creating your family pantry will be part of our kitchen stories with the Liberty Prairie Foundation.

This workshop is part of the Liberty Prairie Foundation's pilot Chef in Residence program, a collaboration with Terri Salminen and Lindsey Shifley, both Super Ambassadors with the Jamie Oliver Food Revolution.

This workshop is for adults only, and the fee is $65/person. Payment must be received via PayPal or check within 1 week of your enrollment or it is subject to cancellation. Registration must be paid in advance of workshop. No refunds for cancellations made less than 2 weeks prior to the workshop. Cancellation at least 2 weeks prior to the workshop is refunded at 90% less PayPal fees if payment was made via PayPal. Refunds will not be given for missed workshops.
